Did you know that North Dakota is one of the top honey-producing states in the US? I didn’t until I moved here, but it explains why Camp Metigoshe’s supporters so generously donate pounds and pounds of honey to camp! These cookies are a fantastic showcase for honey’s flavor since it’s the only sweetener. For a cookie with more texture, substitute ½ cup ground oatmeal for ½ cup of the flour, or use some whole wheat flour.

Honey Chocolate Chip Cookies

½ cup  honey                                                     1 ½ cup flour
½ cup butter                                                      ½ tsp baking soda
½ tsp vanilla                                                      ½ tsp salt
1 egg                                                                 1 cup chocolate chips

Cream together honey and butter. Beat in egg and vanilla. Stir in the dry ingredients and chocolate chips. Chill the dough for at least an hour, especially if your honey is pretty runny. Spoon tablespoons of dough onto cookie sheets and bake at 350⁰ for 12-15 minutes, or until golden brown.
