Molasses Spice Cutout Cookies

molasses-spice-cookiesAs a kid, one of the most exciting days of the Christmas season was the day when we would make and decorate Christmas cookies. My mom would invite our cousins attending the nearby college and their friends over for supper and decorating. It started as a way to make sure cookies got decorated despite fidgety children, but it soon became a fun tradition to invite people over, compare decorating styles while singing Christmas carols, and of course, sending everyone home with plates full of cookies! But don’t limit these cookies to Christmas time—they’re just as good at any time of the year!

Spicy Cutout Cookies

1 cup butter, room temp
1 cup sugar
½ cup brown sugar
1 egg
¼ cup molasses
3 cups flour
1 tsp salt
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
1 cup quick oats

Cream butter and sugars until fluffy. Beat in egg, and then mix in all of the dry ingredients. Chill for an hour. Roll out dough with powdered sugar and cut out desired shapes. Bake at 350⁰F for 7-10 minutes, depending on the size of cookies you have cut out. If your cookies get a little crisp, don’t worry about it—the frosting will soften them up. Let cool, and decorate with your favorite frosting.
