Ranger Cookies

Sturdy enough to pack along for your next hike, these Ranger cookies remind me of granola in cookie form!

Ranger Cookies

½ cup butter, room temp
½ cup sugar
½ cup brown sugar, packed
1 egg
1 tsp vanilla
¾ cup all-purpose flour
½ cup whole wheat flour
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
1 cup rolled oats
1 cup flaked or shredded coconut
½ cup each raisins and dried cranberries

Preheat oven to 375⁰F. Cream together butter and sugars until fully combined, scraping down the sides half way through. Add in egg and vanilla and mix to combine. Stir in dry ingredients just until combined, scraping the bottom of the bowl to make sure everything is evenly mixed.

Drop dough by tablespoons on a lined or greased cookie sheet. Bake for 8-10 minutes, until the edges are golden and the middles are set.
