I always seem to have bananas getting black on my counter. I guess that’s a side effect of having a continental breakfast set up. Lucky for me, I’ve got this recipe in my back pocket. It uses lots of bananas, it’s made it one bowl, and it’s simple enough to make in the early morning hours before the coffee has kicked in. The recipe is flexible, so use more or less sugar, add a crumble topping, or use different flours–make it your own!
Banana Muffins (adapted from Smitten Kitchen)
3-4 ripe bananas, smashed
1/3 cup melted salted butter
¾ cup brown sugar
1 egg
2 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 tsp cinnamon
½ tsp nutmeg
Pinch of ground cloves
1 cup all-purpose flour
½ cup whole wheat flour
Preheat the oven to 375⁰F. Smash together bananas and melted butter with a wooden spoon in a large mixing bowl. Stir in sugar, egg, and vanilla, and then mix in the spices, baking soda, and salt. Stir in flour just until there are no dry streaks. Fill lined muffin pans about ¾ full of batter, and bake for 15-20 minutes, or until a toothpick comes out clean. (Alternately, to make this as a loaf, preheat the oven to 350⁰F, pour batter into a greased 8×4 loaf pan, and bake for 50 minutes to an hour, or until a toothpick comes out clean).
